Here is the great Taco's for a true

Well, first you need fresh
tortillas, red cabbage, cilantro, and some ranch dressing. The salmon
itself can be grilled or pan fried. This Mexican/Polynesian restaurant
(interesting combo?) called Hula Hut, here in Austin, makes amazing
"Chile Rubbed Salmon Tacos". They use a dry rub of some sort of
ground up chiles, maybe chipotles or something, and make fresh tortillas
and dressing. I'm pretty sure they cook the salmon on a grill (flat diner
kind...not BBQ).
I have tried grilling(BBQ) and pan frying, plain and with cajun seasoning.
All of them turned out well. I think the best was the sort of blackened
pan-fried version. It was on par with the inspirational Hula Hut version.
The only times they weren't all that good were when I used grocery store
tortillas and when I tried to lightly bread them ala chicken piccata.
It's a really fresh dish and you really taste everything so I think the
fresh tortillas and the quality of the ranch dressing are easily
overlooked but very important aspects.

New taco news: 
I found a recipe for "Jalapeno Lime Sauce" that sounds like it
might what Hula Hut puts on their tacos. It's a bit of extra work but I
think it might be worthwhile.
Here's the sauce:
3 cups commercial Ranch dressing
1/4 cup roasted green chilies
1/4 cup jalapeno chilies -- pickled or marinated
1 tablespoon lime juice -- freshly squeezed
1/3 bunch fresh cilantro
1/2 Roma tomato -- diced
